Officially 21!

Peach Schnapps Tea

Today was my 21st birthday! Brent’s mom made snacks (crackers, cheese, veggies, dip, fruit) and a big salad and some really yummy grilled chicken. She also made her yummy “eclair” cake. She made it with cinnamon graham crackers, vanilla pudding and whipped cream all with chocolate frosting on top… Soooo good. =)

This picture is of my first “Officially 21″ drink. We mixed sweet tea with Peach Schnapps. It was yummy. =)

Today’s food is ice cream! I had some Neapolitan ice cream tonight because I was feeling lots better. I put some caramel on it, and it was super yummy. =)

Not sure what this coming week’s theme is gonna be, but hopefully I can come up with an interesting one. I need a good challenge this week.

Today’s food is chicken nuggets. Fun Nuggets, to be exact. I love these things. I’m still feeling ill, but I made myself some chicken nuggets to get something solid in my tummy, rather than just soup and crackers. I haven’t had any issues yet, so hopefully that means I’m getting better. =P

I turned down the saturation in this picture because it was all yellowy because I didn’t have the right lighting.

I’ve been sick all day, so all I’ve had to eat is chicken noodle soup and saltine crackers. Brent was sweet enough to go out to the store and get me the soup and crackers, and he got me some ginger ale, which I love when I’m sick. It’s like my comfort drink. But anyways, sorry today’s pic is so boring… I kinda did it last minute because I just realized I hadn’t done a post for the day. Hopefully I feel better tomorrow. =P

Tonight we had hot dogs for dinner, so I thought they would make for a good pic. Every time we have hot dogs, I make Brent’s for him and make hearts with the mustard. I think it’s cute, and he loves them, of course. <3

Cheesecake Squares

Today’s food is cheesecake squares! This is with my Aunt Marie’s recipe, and they’re sooo good. And easy to make! When I was staying with her in Vermont before we moved here, she made them just about every weekend for me! Hehe.

Aunt Marie’s Cheesecake Squares

2 8oz packages of cream cheese
1 1/4 cup sugar
1 tbsp vanilla
2 canisters of Pillsbury croissants (the kind in the tube that pops when you peel the paper off)
Dash of Cinnamon
About 3 tbsp butter

Spread one canister of croissants in an ungreased pan (I think ours was 8×10). Mix cream cheese, 1 cup of sugar and vanilla together and then spread on top of the croissant. Then spread the other canister of croissants on top of that. Then melt the butter and spread on top of the croissants and then mix the rest of the sugar and the cinnamon together and sprinkle on top. Then put in the oven for about 20 minutes at 350 degrees. Cool 10 minutes or so. Leave in fridge for about 2 hours before eating. Store in fridge.
